BROCCOLI AND RICOTTA MASH

Ingredients

Scale

1 medium potato, peeled and cubed

1 large head of broccoli, broken into florets

2 tbs ricotta

1 tbs lemon juice

Zest of one lemon

1 tbs olive oil

Salt and pepper to taste


Instructions

Steam potato for 5 minutes in a steaming basket, add broccoli and steam for a further 5 minutes or until both the potato and the broccoli are soft.

Place potato and broccoli in a medium saucepan over low heat, add olive oil and mash together.

Remove from heat, add ricotta, lemon juice, lemon zest, salt and pepper, and stir until all combined.

Serve warm as the perfect side dish.
