THE ULTIMATE TOMATO SALAD

Ingredients

Scale

1kg of tomato medley (a combination of cherry and small tomatoes)

500g baby cherry bocconcini

1/3 cup fresh basil leaves

½ cup avocado oil

1 tsp Dijon mustard

1 tbs maple syrup

1 tbs apple cyder vinegar

Sea salt and cracked pepper


Instructions

Wash and slice tomatoes in half.

Strain and slice bocconcini in half.

Combine the tomatoes, bocconcini and basil, and place into a large bowl or serving platter.

Make the dressing by combining all the remaining ingredients into a mixing jug, and season to taste with salt and pepper.

Pour dressing over the tomatoes and toss to combine.

Serve.
